Perfectly Simple and Perfectly Delicious!
Here’s a simple salad using hami golden melon, but any similar type – cantaloupe, honeydew, etc. – would work well here, too. I love salads that are simple, but complex in flavor and texture. The soft Boston lettuce combined with the crisp melon, salty prosciutto, sweet dates and bright tart pomegranate arils hits that sweet spot for me. And then adding some toasted hazelnuts simply sealed the deal.

I chose pomegranate molasses, red wine vinegar, and Dijon mustard for the hit of acid in the dressing. It only needed a little sugar, some salt and pepper, and plenty of olive oil to round out the flavors.
Sometimes, the easiest things are the most spectacular. The proof is in the pudding with this salad.
Hami Golden Melon, Prosciutto, and Pomegranate Salad

Ingredients
- Salad
1/3 cup 1/3 hazelnuts, toasted and roughly chopped
1 1 head Boston lettuce, separated into individual leaves
1/2 1/2 hami golden melon, peeled and cut into bite sized cubes
4 4 Medjool dates, pitted and quartered
5 slices 5 prosciutto (approximately 8 inches x 3 1/2 inches), sliced in half crosswise
1/4 cup 1/4 pomegranate arils
- Dressing
1 1/2 tablespoons 1 1/2 pomegranate molasses
1 1/2 tablespoons 1 1/2 red wine vinegar
1/2 tablespoon 1/2 Dijon mustard
1 teaspoon 1 granulated sugar
1/3 cup 1/3 extra virgin olive oil
Kosher salt and freshly ground black pepper
Directions
- Layer all the salad ingredients on a large platter. Whisk together the dressing ingredients, adding salt and pepper as needed. Drizzle over the salad and enjoy!
