I make a really good eggplant spread. Over many years I\u2019ve tweaked it in order to arrive at its current rendition.\u00a0 While I also like baba ghanoush, this one does not contain tahini. That\u2019s a whole different animal.\u00a0<\/p>\n

I start by broiling a couple of eggplants until they\u2019re good and charred and have collapsed. I test them to be sure they\u2019re done by cutting away a little of the skin near the neck. If the flesh is nice and tender, then I know I\u2019m good to go.<\/p>\n
