Savory Waffles with Ricotta and Chili Crisp

An Unusual and Surprising Combination that is Oh, So Delicious.

When we made our batch of chili crisp, my son remarked that he would love to eat it spooned on top of some fresh ricotta. Well, that stuck in my head and I gave it a lot of thought. 

I finally hit on the idea of serving it on a waffle. Knowing my previously posted ube waffles were very light and super crispy, I thought they’d be the perfect receptacle for the ricotta.  I opted to add a generous amount of nigella seeds in order to give them a savory note and a little bit of crunch, while eliminating the ube and other flavorings. 

Topping the waffles with a big scoop of my homemade ricotta and spooning on some chili crisp now worked. But I decided some snipped chives and a spoonful of crispy shallots would be welcome additions. After tasting it, I realized it needed a tiny bit of sweetness. Not enough to turn it into a something sweet, but just enough to balance out the flavors. A teaspoon of maple syrup drizzled on top was the answer.

I served these for dinner and making waffle after waffle while having my family continue to ask for more made me realize I’d hit on a winner. It sounds unusual, but it is exceptionally good. The mild and creamy ricotta is the perfect foil for the deeply flavored chili crisp. Then when it’s combined with a crisp light waffle, it becomes so much more than the sum of its parts. It’s a combination I’ll make again and again. I’ve never tasted anything like it and couldn’t love it more.

The crispiest waffles are given a savory treatment with a scoop of creamy homemade ricotta, chili crisp, crispy fried shallots and snipped fresh chives. Wow, is all I have to say about this.

Directions

  • In a large bowl combine flour and next 4 ingredients. In a medium bowl, whisk until combined, light brown sugar, egg yolks, and buttermilk. In a medium bowl beat egg whites with an electric mixer until medium stiff. Add the buttermilk mixture to the dry ingredients, along with the club soda and stir until well combined. Fold in the egg whites.
  • Cook in a waffle maker according to your brand’s directions. Mine makes round waffles and it took 1/3 cup of batter per waffle. Make sure you cook them until they are nice and crisp.
  • Top with about 1/4 cup of ricotta, a spoonful of chili crisp, 1 1/2 teaspoons crispy fried shallots, 1 1/2 teaspoons snipped chives and a teaspoon of maple syrup. Enjoy!

  1. Saved it! Just got another jar of chili crisp. Thanks to you I got introduced to a new condiment! Any sub for nigella seeds?

    1. Hi, Marty! Nigella seeds have an oniony and smoky flavor. I can’t think of a substitute for their flavor. But you could use mustard seeds or something similar. It won’t taste the same, but it will still be delicious. Here’s what I can tell you about nigella seeds. Once I tried them for the first time, they’ve become one of my most used spices. They lend themselves to so many different dishes. You could try them out by ordering one of those flat packs from The Spice Way on Amazon. Happy to hear you’re enjoying chili crisp!
