Green Cannellini Beans with Tahini

Beans that are Creamy and Full of Flavor from Tahini and Chili Oil.

I’ve been cooking up a storm from the new “Ottolenghi Test Kitchen Shelf Love” cookbook. This time the recipe is called Green Cannellini with Tahini. Seeing as this uses canned beans, I was able to knock it out in about an hour. It involves simmering the drained beans in salted water until they’re nicely softened. Blitzing some reserved beans in the food processor, along with fresh herbs and other seasonings, results in a creamy sauce which is stirred into the warmed beans.

A simple sauce of tahini, lemon juice, garlic, salt, and water is whisked together and drizzled over the beans. He also gives instructions for making a simple chili oil, but I have so many jars and varieties on hand, I opted to use one of those and spooned some over the beans. I chose to add some chopped red onion, simply because I like it so much with this kind of bean dish.

Instead of toasting torn up pita, as specified in the recipe, I used naan. I’m finding that I like naan even more than pita for these crispy types of croutons. The texture of naan is lighter and it really does lend itself well to this treatement. It’s tossed with olive oil, za’atar, salt and pepper before being toasted in the oven and set aside too cool before being strewn across the top of the warm bean dish.

I’m a sucker for all the flavors and textures in this dish, so I couldn’t have been happier. I’ve also become hooked on the toasted naan chips. I loved using them to scoop up the extra tahini sauce.

  1. I feel fortunate to have found this recipe today. Last night I soaked some beans without a plan in place. I happen to have some Ottolenghi tahina sauce in the fridge, along with fresh herbs. How easy is that?
    And I love your philosophy of one truly great dish for every meal. After all, life is too short not to enjoy great food.
