Clementine, Red Onion, and Pomegranate Salad with Fresh Mint

So Much More Than the Sum of Its Ingredients – This Simple Salad will Add Spark to Your Meal.

This is as simple as it gets. A salad which consists of peeled sliced clementines, sliced red onion, pomegranate arils and fresh mint. Feel free to adjust the amounts of the ingredients. You want more onion? More clementines? Go for it.

But I do want to talk about the vinegar I used. It is called calamansi vinegar and is made with only a single ingredient, calamansi juice. Calamansi is the name of a small citrus fruit that mostly comes from the Philippines. Its flavor is a cross between citrus and passion fruit. The vinegar made from this fruit is extraordinary. I’m not exaggerating when I say I could drink it straight from the bottle. I highly encourage you to give it a try. La Boîte in New York carries it, as well as Milk Street, and it can be purchased online from either place.

I splashed on some of that great calamansi vinegar, good extra virgin olive oil, flaky salt, and cracked black pepper. That’s it. Nothing more. And I could eat it every day.

Ingredients

  • 4 or 5 clementines, peeled and sliced 1/4 in thick

  • 1/2 red onion, sliced

  • 3 tablespoons pomegranate arils (seeds)

  • fresh mint leaves

  • 2 tablespoons calamansi vinegar

  • 2 tablespoons extra virgin olive oil

  • flaky salt

  • freshly ground black pepper

Directions

  • Layer slices of clementines and red onions on a platter. Scatter pomegranate arils on top. Sprinkle with salt and pepper, calamansi vinegar and olive oil. Garnish with fresh mint leaves and dig in!

  1. Made this tonight for a grill party. BIG hit, it’s elegant in its simplicity, and SO pretty. My slices wouldn’t hold together, so I sliced them in half and ended up presenting them in a bowl. Everyone loved it, remarking that it was so pretty and tasted so fresh.
